Sourdough Pizza Located in the vibrant heart of Kreis 3 in Zurich,
ALBA Sourdough Pizza is built around craftsmanship, fermentation, and
a deep respect for ingredients. Our concept is enriched by the
presence of AULUS, our 159-year-old sourdough starter, which
represents a living legacy and the foundation of our pizzas. We work
with a unique network of carefully selected producers to help build a
more sustainable food system. By importing many ingredients directly
from our producers and eliminating middlemen, we ensure exceptional
quality, transparency, and consistency in everything we serve. In 2025
, ALBA expanded with two new locations: Birmensdorferstrasse 431 –
focused on delivery, take-away, and workshops, supporting our growing
operations. Stampfenbachstrasse 68 – open also for lunch, where we
offer a different product concept, featuring New York–style pizza
slices, while maintaining our commitment to quality and fermentation.
In addition, we brought ALBA to the festive season with a stand at the
Illuminarium Christmas Market, where we also served NY-style pizza
slices, adapting our craft to a fast-paced, street-food environment.

von Pascal Grob Harry’s Ding Overview We are looking for a
Production Manager starting in March/April 2026 who will play a key
role in ensuring consistency, quality, and efficiency across ALBA’s
production and locations. The role primarily focuses on overseeing
production operations and logistics, while also spending one day per
week working in the restaurant to stay closely connected to service
and team dynamics. For candidates with a creative interest, the
position also offers the opportunity to contribute to seasonal menu
development. Tasks ☀️ Your mission You embody the ALBA Sourdough
values: you adopt a warm, smiling, professional attitude towards the
guests, help your colleagues during service and adopt a "problem
solver" attitude. You organize and monitor production planning
according to restaurant and delivery needs, in coordination with the
pizza team and the production team member currently supporting
production. Engaging in two-way communication with the management team
by effectively communicating needs, ideas, concerns to continuously
improve ALBA. You create the most amazing family meals. You actively
contribute to improving workflows and processes in production. You
supervise stock levels, ordering, and reduce waste. You ensure
recipes, processes, and standards are followed during production. You
are primarily in charge of production operations and ensuring smooth
transport and coordination between ALBA locations. You work one day
per week in the restaurant to stay connected with service and the
team. Requirements What we are looking for (we hire on attitude first)
Radiating smile. Great energy, proactive attitude and team spirit.
Boundless passion for hospitality, pizza & italian-inspired cuisine.
Previous experience as a line cook at least. English intermediate,
Italian would be a plus. Willingness to learn, take on new
responsibilities and grow with Mimo-Hospitality & ALBA Sourdough
